Croque Madame with Mornay Sauce, Caramelized Onion and Quail Egg.
unhhhhhhhh quail eggs. we have quail eggs as a middle course. we barely poach them, then roll the yolks in paper thin strips of brioche and then sear them so the bread cets toasted.
they get caviar too but i can’t eat that because o my ~allergies. but i love me some quail eggs
